Fran's Eggplant Casserole
My MIL made this for me, it is really good.
List of Ingredients
- 1 large eggplant
- 3 tablespoons olive oil
- 1 onion
- 1 small green pepper
- 2 cloves garlic (she only used one)
- 2 tablespoons chopped parsley
- 1/2 cup cream
- 2 eggs, beaten
- buttered bread crumbs if desired
Instructions
- Peel and cut eggplant in 1 inch pieces.
- Boil until tender, drain, pat dry.
- Put oil in pan, saute onion until slightly softened, add garlic and green pepper and cook until tender.
- Add eggplant.
- Mix cream and eggs and salt to taste.
- Put in buttered casserole and top with crumbs.
- Bake for 20-25 minutes in a 350 degree oven.
Final Comments
Also good if you leave out the eggs and use for a pasta sauce.
