    Fran's Eggplant Casserole

    My MIL made this for me, it is really good.


    List of Ingredients


    • 1 large eggplant
    • 3 tablespoons olive oil
    • 1 onion
    • 1 small green pepper
    • 2 cloves garlic (she only used one)
    • 2 tablespoons chopped parsley
    • 1/2 cup cream
    • 2 eggs, beaten
    • buttered bread crumbs if desired


    Instructions


    1. Peel and cut eggplant in 1 inch pieces.
    2. Boil until tender, drain, pat dry.
    3. Put oil in pan, saute onion until slightly softened, add garlic and green pepper and cook until tender.
    4. Add eggplant.
    5. Mix cream and eggs and salt to taste.
    6. Put in buttered casserole and top with crumbs.
    7. Bake for 20-25 minutes in a 350 degree oven.


    Final Comments


    Also good if you leave out the eggs and use for a pasta sauce.
