Sherrie's Rhubarb Bread

List of Ingredients
1 ½ cup brown sugar
¾ cup vegetable oil
1 egg
2 ¼ cup flour
1 cup buttermilk (or add 1 tbsp vinegar to milk)
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
2 ½ cups chopped rhubarb
Recipe
Heat oven to 325 degrees. Mix brown sugar, oil, and egg together. Add flour, milk, salt, baking soda, cinnamon and vanilla. Stir in rhubarb. Place in two 9x5 greased pans. Bake for one hour.
Topping: ½ cup powdered sugar and 1 tbsp butter, mix. Sprinkle over warm bread.
