Recipe Introduction
Douglas Reiter worked as a Chef for 20 years in and around the Twin Cities of Minneapolis and St Paul. This recipe is from the Parkway Restaurant in Minneapolis. He started working there in 1969 and finished his apprenticeship there in 1971. The Parkway Restaurant was located on the corner of Minnehaha Parkway and Hiawatha Avenue near Minnehaha Falls. It began during WWII as a Canteen Restaurant and then the Parkway Motel was built. Now there is a strip mall in it’s place. Times change but this dressing is still the best.
List of Ingredients
4 #10 cans of ketchup
2 #5 Cans of tomato puree
2 med onions
1 gallon vinegar
1 gallon salad oil
2 hands of salt
2 covers of garlic salt
4 cups of sugar
Recipe
Chop onions very fine in a buffalo chopper. Mix all ingredients together. Makes 7 gallons.
