    A dark, easy-to-make bread tht will stay moist for days...if it lasts that long!

    List of Ingredients


    • 2 1/2 cups carrots, shredded
    • 1 cup pecans, finely chopped
    • 2 cups unbleached flour
    • 1 1/2 cup sugar
    • 2 teaspoons baking powder
    • 2 teaspoons sugar
    • 1 teaspoon salt
    • 3 eggs
    • 1 1/2 cup vegetable oil
    • 2 teaspoons vanilla


    Instructions


    1. In a medium bowl, toss together the carrots and pecans and set aside.
    2. In another bowl, stir together flour, sugar, baking powder, cinnamon and salt. Set aside.
    3. In a large mixing bowl, beat eggs with electric mixer. Beat in oil and vanilla.
    4. Gradually beat in flour mixture, then carrot mixture.
    5. Turn into a well-greased 10" tube pan.
    6. Bake at 325 degrees for one hour and 10 minutes or until toothpick inserted in center comes out clean.
    7. Cool Completely.
