    This is SO yummy....DH & I LOVE it!! I make it several times every summer. Although, you have to bake it, it's great during the summer because the squash is in season & soon you'll see it at all the roadside veggie stands. Or in your garden, if you have one. You can also use low-fat or fat free ingredients & won't be able to taste the difference.

    List of Ingredients




    1/4 cup mayonaise
    1/4 cup chopped onion
    1/2 cup cracker crumbs (divided)
    1 egg, beaten
    1 teaspoon sugar
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 pound yellow squash (cleaned, boiled and smashed)
    1/4 cup (1 ounce) shredded chedder cheese

    Recipe



    Combine first 7 ingredients (holding back 1/4 cup crackers). Mix in smashed squash. Pour into greased casserole pan. Sprinkle remaining crackers on top. Bake at 350 degrees (F) 25-30 minutes. Sprinkle cheese on top and bake an additional 5 minutes.
