    Recipe Introduction


    This can be made very quickly. I absolutely love this dish, but DH hates artichoke hearts so I only give him the shrimp. More artichoke hearts for me, though!
    Note: Use a skillet that you won't mind placing in the oven.

    List of Ingredients


    • 2 pounds medium shrimp (shelled, deveined, rinsed and drained)
    • 1/3 cup margarine
    • 4-5 cloves garlic, minced
    • salt
    • freshly ground pepper
    • 2 6oz. jars marinated artichoke hearts
    • 3 tablespoons lemon juice
    • 1/4 cup dry white wine
    • parsley, chopped
    • lemon wedges


    Instructions


    1. In a large skillet combine butter and garlic over medium heat until just sizzling.
    2. Add shrimp, turning to coat all sides. Sprinkle lightly with salt and pepper.
    3. Bake at 400 degrees for 5 minutes -- just until shrimp begins to turn pink.
    4. Add artichoke hearts with half the marinade from the jars.
    5. Add lemon juice and wine.
    6. Return to oven and bake until shrimp are done and artichoke hearts are heated through, about 5 minutes longer.
    7. Turn into a serving dish. Sprinkle with parsley and serve with lemon wedges.
