Parmesan-Herb Baked Fish Fillets

Here is my all-time favourite recipe. It literally takes a half hour from start to finish and it tastes great.

List of Ingredients
- 1 package (1 lb) frozen fish fillets, thawed and patted dry (I use cod, but any fillet would probably do)
- 1/4 cup light mayonnaise
- 1/4 cup grated parmesan cheese
- 2 tbsp chopped green onions
- 1 tbsp chopped pimento or red bell pepper
- cayenne pepper to taste
- 1/2 cup dried bread crumbs
- 1/2 tsp dried basil
- black pepper to taste
Instructions
- Place fish fillets in a single layer in bottom of 11x7 greased baking dish. Set aside.
- In a small bowl, stir together mayonnaise, parmesan cheese, onions, pimento and cayenne pepper. Spread mixture evenly over fish fillets.
- In a separate bowl, combine bread crumbs, basil and pepper; sprinkle over top of fish. Bake in 400 degree oven for 10 to 12 minutes or until fish is opaque and flakes easily with a fork.
