    Parmesan-Herb Baked Fish Fillets

    Recipe Introduction


    Here is my all-time favourite recipe. It literally takes a half hour from start to finish and it tastes great.

    List of Ingredients


    • 1 package (1 lb) frozen fish fillets, thawed and patted dry (I use cod, but any fillet would probably do)
    • 1/4 cup light mayonnaise
    • 1/4 cup grated parmesan cheese
    • 2 tbsp chopped green onions
    • 1 tbsp chopped pimento or red bell pepper
    • cayenne pepper to taste
    • 1/2 cup dried bread crumbs
    • 1/2 tsp dried basil
    • black pepper to taste


    Instructions


    1. Place fish fillets in a single layer in bottom of 11x7 greased baking dish. Set aside.

    2. In a small bowl, stir together mayonnaise, parmesan cheese, onions, pimento and cayenne pepper. Spread mixture evenly over fish fillets.
    3. In a separate bowl, combine bread crumbs, basil and pepper; sprinkle over top of fish. Bake in 400 degree oven for 10 to 12 minutes or until fish is opaque and flakes easily with a fork.
