    Spanakopita (Spinach Pie)

    List of Ingredients

    10 oz. frozen spinach; thawed and chopped
    1/4 cup olive oil
    1 tablespoon olive oil
    1/4 teaspoon ground nutmeg
    1 onion; large
    1 cup feta cheese crumbled
    1 cup low-fat cottage cheese small curd
    1 pound phyllo dough

    Recipe

    phyllo dough should be at room temperature and the cottage cheese drained.

    Toss thawed spinach in pan on low heat until water evaporated and then allow to cool. Heat 1 Tblspn of oil over medium heat. Add onion; saute 5 minutes, stirring.

    Add spinach, nutmeg, and salt and pepper to taste.

    Saute 3 minutes, then remove from heat; drain. With fork, stir in cheeses.

    Preheat oven to 350°. Lightly grease a 9x13 inch baking pan with oil. Cover bottom with a layer of phyllo dough; fold edges up and over edge of pan. Brush with oil. Repeat until you have 8 layers. Add half the spinach
    mixture and 8 layers of phyllo, brushing oil on each layer. Spread with remaining filling. Trim excess dough that hangs over the side of the pan.

    Place a single layer of dough over the tops so that all the excess hangs over one side. Brush with oil and fold over the hanging edge, as if you were closing a book. Brush with oil; repeat with 3 more layers of dough.

    Coat the top layer with oil. Bake for 45 minutes or until crisp.
