Stuffed Shells

List of Ingredients
- 1 bunch of fresh spinach (frozen may be used)
- A box of large noodle shells
- 1/2 lb non-fat cottage cheese + 1/2 lb low fat cottage cheese
- 1 can of olives
- 1 can of chopped tomatoes
- 3 large fresh tomatoes (any kind)
- 1 garlic clove
- Italian Seasoning (from a shaker) to taste
- Parmesan Cheese (optional)
Instructions
- Boil noodles ahead of time making sure they're al dente & completely cooled.
- Mix sliced olives, cottage cheese, & chopped spinach. Sprinkle italian seasoning in the mix - stir well.
- Stuff the cooled shells w/the mixture
- Pour 1 can chopped tomatoes over the top. Arrange chopped tomatoes over top. Mince garlic clove and put on top of tomatoes. Sprinkle w/Parmesan Cheese (optional)
- Bake @425 for ~40 mins.
Final Comments
Serve with green salad and lowfat garlic bread (recipe located in 'lowfat' and 'bread' categories)
