    Kevin's mother is Mexican and she makes the best Mexican food! This is her rice recipe.

    List of Ingredients




    1½ cup Rice
    ¼ cup Chopped Onion
    1 clove Chopped Garlic
    2 Tbs. Cooking Oil
    1 tsp. Salt
    1 8oz. can Chicken Broth
    1 cup PACE Picante Sauce
    ½ cup Water

    Recipe



    Heat cooking oil in large frying pan till hot. Add all of rice and stir until nice and golden brown (Browning takes about 10-15 minutes). Watch carefully to avoid rice from burning; stir continuously when browning. When rice is nice and brown, stir in the onion and garlic. Turn off heat and let set for a few minutes. Now add the broth, picante sauce, salt, and water. Stir a couple of times and let come to a full boil. After it comes to a full boil, turn the heat down to a low/simmer flame and cover with lid. Allow to
    simmer for about 15-20 minutes, then turn off the heat and let sit for about 5 minutes with lid on. Rice should be nice and fluffy. Enjoy!

    Note from Lucia: After the rice has cooked, my Grandmother Secundina Garcia used to decorate with slices of hard boiled eggs and she would sometimes stir in about ½ cup of green peas when she added the broth, picante sauce, etc. This Mexican rice is a traditional dish served at Mexican weddings along with Chicken mole. You can use the same above ingredients and substitute fideo for the rice and you will have what is traditionally known as "sopa" or "fideo." This is another dish that is also served at Mexican weddings.
