    Recipe Introduction


    I like this stir fry recipe because it uses things I usually have on hand.

    List of Ingredients


    • 1/4 cup soy sauce
    • 2 tablespoons sugar
    • 1 tablespoon cider vinegar
    • 1 tablespoon ketchup
    • 1/2 teaspoon ground ginger
    • 2 garlic cloves, minced
    • 1 pound boneless, skinless chicken, cut into strips
    • 2 tablespoons vegetable oil (or peanut oil)
    • 1 package (16oz) stir-fry vegetables
    • 1 can (8oz) unsweetened pineapple chunks, drained
    • hot cooked rice


    Instructions


    1. In a small bowl, combine first six ingredients; set aside.
    2. In a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until juices run clear.
    3. Add the vegetables; stir-fry for 3-4 minutes or until crisp-tender.
    4. Stir in pineapple and reserved soy sauce mixture; heat through.
    5. Serve over rice.


    Final Comments


    Yield: 6 servings.
