    List of Ingredients




    8 cups diced cooked potatoes
    2 cups diced onions
    1/2 cups diced green peppers
    4 TBS butter
    4 oz. jar pimentos
    1 can undiluted cream of celery soup
    1/2 cup milk
    1 cup grated chedder cheese (I always use more)
    buttered bread crumbs

    Recipe



    Place potatoes in casserole. Saute onions and green peppers in butter until soft. Add pimentoes. Mix soup, milk and cheese. Combine onions and soup mixture; pour over potatoes and mix well. Sprinkle with crumbs. Bake 20 min. at 350 degrees. Serves 8. (I always thought it served more!!!)

    Also good with diced ham mixed in!
