AMARETTO CAKES
Cake
2 C. unsifted all-purpose flour
1 T. baking powder
1 1/2 C. sugar
7 egg yolks
1/4 C. amaretto liqueur
1/2 C. water
1/2 C. vegetable oil
7 egg whites, stiffly beaten
Preheat oven to 325ºF. In a large bowl, combine flour, baking powder andsugar. Stir to blend and add egg yolks, amaretto,water and oil. Beat until smooth. Fold in beaten eggwhites. Pour into three 8-inch cake pans that havebeen greased and floured. Bake for 30 to 35 minutes.Cool in pan 10 minutes. Remove from pans and cool completely on wire racks.
Filling
2 T. cornstarch
1/2 C. amaretto
1/2 C. orange marmalade
Whisk cornstarch into amaretto until dissolved. Placeover medium heat, adding the marmalade. Heat untilmixture is thick. Cool and spread between layers ofcake.
Frosting
2 egg whites
2 T. amaretto
3 T. water
1 C. sugar
Beat egg whites until stiff in a small bowl. Boilamaretto, water and sugar until mixture reached 242ºFon a candy thermometer. With mixer running, drizzlethe hot syrup into the egg whites. Continue beatinguntil mixture holds stiff peaks. Spread over top andsides of cake. Makes 10 servings.
