BLUEBERRY ZUCCHINI MUFFINS
1 pkg. Pillsbury Lovin' Lites Bluebery Muffin Mix
1/2 cup water
1/2 cup grated zucchini
2 egg whites or 1/4 cup frozen cholesterol-free egg product,thawed
1 teaspoon cinnamon
Heat oven to 400 degs.F Spray muffin cups with nonstick cooking spray or line with paper bakingcups. Drain and rinse blueberries; set aside.In medium bowl, combine muffin mix, water, zucchini, egg whites andcinnamon. Mix just until moistened; fold in blueberries. Fill spray-coated muffin cups 2/3 full. Bake at 400 degs. F. for 15 to 20minutes until light golden brown. Cool 5 minutes; remove from pan. Servewarm. 12 to 14 muffins.
