    This is a dish I am going to try when my friend Laurel comes over for lunch this next week. Not sure this is low enough sodium for me but I plan on modifying it so it is. I can buy the Pringles that are lower in salt and fat. Have used the no fat or light mayo to make the Chicken Cordon Bleu and it turns out just great.

    Cheezy Potato Chip Chicken
    Makes 4 servings

    1/2 cup fat-free mayonnaise
    2 tbsp. Tostitos Salsa con Queso (cheese dip)
    1/4 tsp. black pepper
    1/4 tsp. garlic salt or powder
    1 tsp. dry onion flakes
    Dash of seasoned salt
    Black pepper to taste
    1 cup crushed potato chips
    4 boneless, skinless chicken breasts
    Nonstick cooking spray

    Preheat oven to 350*.Spray large skillet with nonstick cooking spray.In small bowl, mix together mayonnaise, cheese dip, and all spices and seasonings. Place crushed potato chips on a dinner plate. Dip each chicken breast in mayonnaise mixture and then roll in crushed potato chips. Place in a prepared baking dish. Spray the tops of the chicken breasts with a little nonstick cooking spray. Season each chicken breast with black pepper. Bake at 350* for 35-40 min. or until golden brown. Per serving 5.7 g fat, cal 238
