Big,Fat,Dark and Chewy Brownies for a Crowd

Big,fat,Dark and Chewy brownines for a Crowd
2. C. unsalted butter,melted and cooled
2 C. white sugar
1 1/2 C. brown sugar
1 1/2 tsp. vanilla
6 eggs
1 1/2 C. cocoa
2 C. unbleached all purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 C. chopped pecans or walnuts(optional)
Non stick cooking spray
1. Preheat oven to 350 degrees F. Spray a 9x13-inch pan lightly with cooking spray. Line bottom with parchment paper.
2. In a mixing bowl with electrix mixer,blend melted butter with white and brown sugar,then add vanilla and eggs. Blend well on slow speed. In a separate bowl,stir together cocoa,flour,baking soda and salt. Fold into batter and blend well,scraping bottom of mixing bowl to ensure ingredients are evenly combined. Fold in nuts if using.
3. Pour or spoon into prepared pan. Place pan on a cookie sheet(this protects bottoms from over baking while top bakes.) Bake until done (35-40 minutes). Brownies will be set and slightly firm,but not dry.
4. Cool then freese 1 hour before cutting. Un-mold before cutting. Peel off parchment paper. Cut into large blocks(about 2 1/2x3 inches). Wrap each in wax paper and keep refrigherated or frozen. to serve for a party,pile brownies on platter and dust with confectioners sugar. Great served with a scoop of ice cream Here's the bad news: Per brownie:525 calories,6 grams of protien,65 grams of carbohydrate,3 grams of fiber,28 grams of fat,16 grams of sturated fat,147 milligrams of sodium.
