Swedish Shrimp Plate
Ingredients
Dressing:
1/2 cup dairy sour cream
1 tbsp chopped fresh parsley
1 tbsp capers
1 to 2 tsp anchovy paste, if desired
Salad:
8 oz. cooked medium shrimp
1/2 cup cooked peas
4.5 oz jar whole mushrooms, drained
1/4 cup oil
1/4 cup lemon juice
1/4 tsp dry mustard
Lettuce leaves
1 medium tomatoe, quartered
1 egg, hard-cooked, cut into wedges
In small bowl, combine all dressing ingredients; mix well.
Refrigerate to blend flavors. Place shrimp, peas and
mushrooms separately in shallow glass pie pan or dish; do
not mix. In small bowl, combine oil, lemon juice and mustard
to make marinade. Spoon over shrimp and vegetables. Cover;
marinate in refrigerator at least 30 minutes. To serve,
arrange shrimp, peas and mushrooms on individual lettuce
lined serving plates. Garnish with tomato and egg wedges.
Serve with dressing.
