These healthy recipes might be of interest. I always used ground turkey breast instead of beef.
Unstuffed Cabbage Rolls
Cooking spray
1 teaspoon canola oil
1 medium onion, chopped
2 teaspoons paprika
One 8-ounce can no-salt added tomato sauce
One 14 1/2-ounce can no-salt-added tomatoes, chopped, with juice reserved
2 teaspoons honey
2 teaspoons cider vinegar
2 cups packaged coleslaw mix
1 cup cooked long-grain rice
8-ounces lean ground beef, cooked and drained
1/4 teaspoon salt or to taste
Plain nonfat yogurt for garnish, optional
Preheat oven to 350ºF.Spray a medium skillet with cooking spray. Add oil, onion, and paprika. Sauté over medium heat for 5 minutes.Add tomato sauce, tomatoes, honey, and vinegar; bring to a boil, reduce heat and simmer, uncovered, for 10 minutes.Spray a medium baking dish with cooking spray. Add coleslaw mix, rice, hamburger, salt, and tomato sauce mixture. Stir to combine. Cover dish with foil and bake for 40 minutes.Garnish each serving with yogurt if desired.
