    I am always looking for healthy recipes....being a diabetic and also on low fat, low sodium diet. This is a good one and can be increased to feed more than two.

    Peppered Pork with Raspberry Glaze

    Two 5-ounce boneless lean pork loin chops
    1 teaspoon coarsely ground black pepper
    2 tablespoons raspberry jam or all-fruit spread
    2 tablespoons raspberry vinegar (cider or balsamic vinegar also work)
    Cooking spray

    Rub both sides of pork with pepper.Combine jam and vinegar in a small microwavable bowl; microwave on high for 45 to 60 seconds or until jam is melted. Remove from microwave and stir; set aside. Spray a medium skillet with cooking spray. Cook chops, uncovered, over medium heat for approximately 6 to 7 minutes per side or until pork is no longer pink. Drizzle glaze over pork before serving.Makes 2 servings.
