    Joan's Shrimp Creole

    Recipe Introduction


    Joan grew up in the heart of Cajun country. This is based on her grandmother's recipe for Shrimp Creole.


    List of Ingredients


    • 1 lb raw peeled and cleaned shrimp (fresh is best, but frozen will work)
    • 1/4 cup flour
    • 1/3 cup melted shortening or vegetable oil
    • 1 cup hot water
    • 1 (8oz) can tomato sauce
    • 1/2 cup chopped green onions (include tops)
    • 1/2 cup chopped parsley
    • 1/4 cup chopped green pepper
    • 4 small cloves of garlic (finely chopped)
    • 1 1/2 tsp salt
    • 1/2 tsp crushed whole thyme
    • Dash of cayenne pepper
    • 2 whole bay leaves
    • 1 lemon slice
    • 2 cups of rice (cooked)


    Instructions


    1. Start by cooking your rice to the instructions. Time the rice to finish when the creole is ready to serve.
    2. Cut any large shrimp in half, medium or small shrimp leave in one piece.
    3. Blend the flour into your oil or melted shortening and brown. Stir CONSTANTLY.
    4. Add your hot water gradually and cook until thick and smooth. KEEP STIRRING CONSTANTLY. I DON'T CARE IF YOUR HAND IS TIRED!
    5. Add all the remaing ingredients (except rice which should be happily cooking in another pot)
    6. Cover and simmer for 20 minutes.
    7. Remove the bay leaves and serve over your rice.


    Final Comments
