Recipe Introduction
Tony is from Brazil and knows a good Cataplana. A cataplana is a copper Portuguese cooking pan, but in this recipe we use a Dutch oven and the final product is just fine! He says once again Martha's right on the mark with this recipe!
List of Ingredients
- 2 tbsp olive oil (or enough to coat the bottom of Dutch oven)
- 1 1/2 cups salsa (use your favorite red or green is okay)
- 2 medium potatoes, peeled and thinly sliced.
- 2 whole, skinless, boneless chicken breasts (halved)
- 1 medium onion, thinly sliced.
- 1 tsp dried oregano
- Salt and pepper to taste.
Instructions
- Preheat your oven to 350.
- Place the olive oil in the bottom of a Dutch oven and distribute to cover the entire bottom of the pan.
- Add 1/2 of the salsa on top of the oil.
- Next add the layer of potatoes. (thinly sliced - add a nice even layer)
- Now lay your chicken breasts on top of the potatoes.
- Next do a layer of onion slices.
- Now do a layer with the remaining salsa.
- Sprinkle oregano on top.
- Salt and pepper to your taste.
- Cover the Dutch oven and bake for 1 1/2 hours at 350.
Final Comments
A little bit of Brazil and Portugal for a nice dinner treat!
