    Russian River Harvest Salad

    The Bohemian Cafe in Occidental, CA near the Russian River.


    Recipe Introduction


    The Bohemian was a small little hippy cafe, that served some of the best meals in Sonoma County. This was their salad that everyone LOVED - Sadly the Bohemian closed it's doors in 2001!


    List of Ingredients


    • 1 Head green leaf lettuce, cut up, washed and dried.
    • 1 head radicchio, cut up, washed and dried.
    • 1 cup walnuts, lightly toasted and coarsely chopped.
    • 1 cup of dried cranberries or dried cherries.
    • 4 small individual goat cheeses or an 8 oz log cut into 4 pieces. (Cowgirl Goat Cheese is from Sonoma County..but other goat cheeses will work just fine)
    • 3/4 cup Balsamic Vinaigrette (See other recipe or bottom of this for another suggestion)


    Instructions


    1. Preheat the oven to 350
    2. Mix the lettuce and the radicchio together.
    3. Arrange on the plates.
    4. Sprinkle walnuts and cranberries on top of salads.
    5. Put goat cheese on aluminum foil sprayed with a nonstick spray in oven for about 4 to 6 minutes or until the cheese starts to soften.
    6. Drizzle the Balsamic Vinaigrette on top of the lettuce.
    7. Place a warmed goat cheese on top of the salad and serve immediately!


    Final Comments


    If you want to skip on step you can use NEWMAN'S OWN BALSAMIC VINGAIGRETTE. It's very close to the home made! Otherwise see Russian River Balsamic Vinaigrette recipe.
