List of Ingredients
- 3 eggs
- 1 cup white sugar
- 3/4 cup brown sugar
- 1 cup oil
- 1 teaspoon vanilla
- 2 cups zucchini, grated
- 3 and 1/8 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup walnuts, chopped
- 3/4 cup raisins
Instructions
- Heat oven to 350*
- Grease two 9x5x3 loaf pans.
- In large bowl, cream eggs and sugars.
- Stir in oil, vanilla and grated zucchini.
- Blend in flour, soda, salt, baking powder, and cinnamon.
- Stir in nuts and raisins.
- Pour into pans and bake 60 to 70 minutes or until wooden pick inserted in center comes out clean
- Remove from pans.
- Cool thoroughly before slicing
