Ice Box Cinnamon Cookies

List of Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 2 eggs
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 1 cup finely chopped pecans or walnuts
Instructions
- Cream butter; gradually add sugars, beating at medium speed of an electric mixer until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Combine flour, soda, salt and cinnamon; stir well.
Add to creamed mixture; beating well.
- Stir in pecans.
- Shape dough into two 10-inch rolls; wrap in wax paper, and chill at least 8 hours.
- Unwrap rolls, and cut into 1/4-inch slices; place 2 inches apart on greased cookie sheets.
- Bake at 350* for 10 to 12 minutes.
- Let cool on wire racks.
