Cranberry Cream Pie

- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 (16oz.) can jelled cranberry sauce
- Dash salt
- 1 teaspoon grated lemon rind
- 1 teaspoon lemon juice
- 2 egg whites
- 2 tablespoons sugar
- 1 (9-inch) baked pie shell
Instructions
- Soften gelatin in cold water in top of double boiler over hot water; stir until dissolved.
- Add cranberry sauce, salt, lemon rind and juice; stir until smooth.
- Remove from heat; chill until mixture beguns to set.
- Meanwhile, whip egg whites until stiff. Fold in sugar. Fold all into gelatin mixture.
- Turn into pie shell.
- Chill until firm.
