Lemon Muffins

List of Ingredients
- 2 tablespoons grated lemon rind
- 2 tablespoons lemon juice
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs, separated
- 2 tablespoons sugar
- 1/4 teaspoon ground cinnamon
Instructions
- Sift together flour, baking powder and salt.
- Cream butter and add sugar, beating until light and fluffy.
- Beat egg yolks until lemon colored and add to butter mixture.
- Add flour mixture. Do not overmix, just continue until flour disappears.
- Beat egg whites until stiff. Add grated rind and lemon juice, fold in egg whites.
- Fill greased muffin pans 3/4 full. Combine 2 tablespoons sugar and cinnamon and sprinkle on top of each muffin.
- Bake at 375* for 25 minutes or until done.
- Yields: 1 dozen
Final Comments
For blueberry muffins, substitute 1 cup blueberries, fresh or canned(drained) or frozen in place of lemon rind and juice.
