Company Chicken and Noodles

Recipe Introduction
This recipe comes from the courtesy of Day Dreamers 11. The Days had a resturant in Lake Charles, La. that has been close for a while, but everyone still talks about it, so you know its a winner.
List of Ingredients
- 4 chicken breasts, skinned and boned.
- 1/4 pound mushrooms, sliced
- 1 package Pioneer Chicken Gravy
- Paprika
- 8 ounce package egg noodles
- 1 tablespoon butter or margarine
- 1/2 small onion, chopped
- 1/2 cup sherry (the real stuff, not cooking sherry)
- Tony's seasoning
- 1 1/2 cups water
- 8 ounces sour cream, fat free
Instructions
- Spray Dutch oven with vegetable spray. Cook pasta according to package directions.
- Drain and rinse, leaving in colander.
- In same pot, respray and melt buter over mediun high heat. Add chicken breasts which have been sprinkled with Tony's seasoning and paprika. Brown chicken, remove from pot and set aside.
- Turn heat down slightly ; saute onions about 3 to 4 minutes, stirring browned bits that were left in bottom of pan while frying the chicken, with the onions.
- Add mushrooms and cook about 2 minutes. Add sherry and return chicken to pot.
- Cook, covered, on low heat about 30 minutes, or until chickn is done.
- Dissolve gravy mix in 1/2 cup water and add to pot.
- Stir and add 1 cup additional water. When mixture has boiled about 1 minute, turn fire off and stir in sour cream.
- Place drained pasta in microwave dish with cover, and pour chicken and sauce over noodles.
Sprinkle with parsle and paprika.
- Heat in microwave until noodles and chicken are hot, about 3 to 5 minutes.
