Ju's Stir Fried Flat egg Noodles.

Recipe Introduction
Stir fried noodles or chow mein is a great all in one meal for bust ppl. But there are good chow mein and a bad chow mein. Here I have used the flat egg noodles- dried from the packet, but you can use any flat noodles. It is important to run the cooked noodles in cold running water to refresh and keep the noodles bouncy instead of a soggy mess. Do toss the noodles in a tiny bit of oil to keep them nice and separate. As with pasta, keep the noodles al dente when boiling them in hot water. I have used some spicy chilli prawn/shrimp paste that you can buy in a container made by a Thai company, called Chilli in oil which is a thick chilly shrimpypaste. If unavailable, omit them or just use a red curry paste or the chinese chilli oil.
List of Ingredients
1 packet of dried flat egg noodles (250g)- cook according to instructions and prepare them as described above.
7 dried chinese shitake mushrooms- soaked in hot water for 15 minutes till tender. Reserve the soaking liquid for cooking later on. Cut the mushrooms into strips but discard any hard stalks.
150 g of minced pork- seasoned with some light soya sauce and sesame oil.
1 large leek- cut into halves and then lengthways and then into thin strips.
1 small bunch of spring greens- washed, cut into strips and then blanched quickly in hot salted water for 1 to 1 1/2 minute. Set aside.
2 cloves of garlic- chopped
1 tablespoon of chilli prawn paste or your chosen substitute from the suggestion above.
Ingredients B (mix together):
3 tablespoon of dark soya sauce
1 tablespoon of light soya sauce
1 table spoon of oyster sauce
1/2 tsp of sugar
the reserved mushroom liquid
100 ml water (if reserved liquid is a small amount)
For Omelette:
2 eggs- beaten and seasoned with abit of salt, pepper, 2 tbsp of water and a few drops of sesame oil.
Recipe
Method:
1) Heat you wok or large frying pan till smoking and then add about 1 tbsp of oil. When the oil is nice and hot, make a large thin omelette and cook till the underside is nice and brown and then flip over. Set aside. Heat abit more oil and add in the minced pork and stir well till meat is brown and cooked. Set aside.
2) Then heat 3 tablespoon of oil till hot and add in the chopped garlic and stir fry till fragrant. Be careful not too burn the garlic. Next add in the chilli paste and stir fry for 1/2 minute. Add in Ingredients B and bring to a boil.
3) Now add in the noodles and stir well till well coated. Next add the leeks, mushrooms and pork. Stir fry till the liquid has evaporated and the noodles are lovely and brown in colour from the sauce. MAke sure you stir constantly to avoid sticking and burning from the highy heat. Taste and if needed add more soya sauce.
4) Shred the omelette into strips. Serve the noodles in a large platter and then garnish with the omelette strips and blanched spring greens.
