I made this last night and finished the rest for lunch today. Why ham? Because I had bought a thick piece to use in a quiche earlier in the week and wanted to use the leftover. I Googled Alfredo recipe, which led me to a "quick and easy Alfredo sauce", and modified it to feed one or two.
Sauce:
3 Tbsp butter
3-4 oz cream cheese, softened to room temperature
couple dashes garlic powder
Heavy whipping cream
Grated parmesan cheese (I used about 2 Tbsp, but next time I 'll use just one)
dash black pepper
Recipe
First I made zucchini zoodles and sauteed them in butter, lightly salted. I chopped up about 1 1/2 cups ham in small cubes and added that to the zoodles. I then made the sauce like this:
Melt butter in skillet, added the cream cheese and garlic powder, stirring constantly til well combined. Then I started adding the HWC, to the desired consistency. When it was to my liking, I added the parmesan and pepper, and poured it over the ham and zoodles.
