Chocolate Coconut Dessert

I recently came across this low carb, sugar free dessert that is very quick and easy to make, and is pretty darn delicious. If you liked Almond Joy prior to your diagnosis, you may also like this version.

1 ounce unsweetened chocolate
2 tablespoons butter
2 tablespoons heavy cream
1/2 teaspoon vanilla extract
5 packets sweetener (such as Stevia)
1/3 cup shredded unsweetened coconut
9 almondsRecipe
Heat butter and chocolate until chocolate just melted. Pour in small bowl, mix well. Add in heavy cream, vanilla and Equal; stir until mixture looks creamy and smooth. Add in coconut, mix well.
Put spoonful of chocolate mixture on place which has been covered in wax paper. (I use a silicone baking mat) Push an almond on top of each piece. Chill until able to pick up with fingers. Store in refrigerator. Makes 9 servings.
