This is a super quick and easy mousse recipe that I tried the other day, and I really liked it. This is probably not new to long-time members, but I thought I'd share it anyway:
1 cup HWC
3-4 packets of Stevia (or your choice of SF sweetener)
2 Tbsp unsweetened cocoa
Recipe
Whip HWC until it begins to thicken, then add 1 packet of sweetener at a time and continue to whip the cream. Add in the cocoa. It should already be thickening up.
Put into serving cups and refrigerate. That's it. Super easy.
I use a small blender I bought at Target a couple of years ago for $15. It whips up HWC in no time flat. So I put the HWC in my little blender, hit the on button and about 15 seconds later, add in the sweetener and cocoa, whip it a little longer and it's done. With the above measurements, I make 3 servings.
For a chocoholic like me, this hits the spot. I love it because I almost always have these three ingredients on hand, so anytime I need a sweet fix, I can make this up.
