15 dried whole chilli, soaked for 2 hours and de-seed and crushed ...........the short cut is to use chilli flakes, a small cup, and soak in the water for 30 minutes and crushed.
2 head garlic finally chopped
inch of fresh ginger, fine chopped
2 table spoon soya sauce
30 to 40 ml oil
20 ml vinegar.
salt and pepper for taste

heat up the oil, fry the garlic and ginger to very light colour, add the crushed chilli, vinegar, soya, salt and pepper...............bring it to nice boil for 3 to 5 minutes.
cool and filled up in a small jar.
so at times I stir fry chicken, or prawns, or even vegetables in this sauce.
