I'm not sure this qualifies as an actual recipe, because it's very basic. However, I made this the other night when I didn't have much on hand, and I really liked it. It's now going into regular rotation.
2 stalks celery, sliced
about 1/4 cup chopped onion
1-2 Tbsp butter or coconut oil
1 link of Aidells All Natural Cajun-style Andouille sausage
1/2 Cup shredded jack cheese
Recipe
Melt butter or oil in sauce pan
saute onion and celery for several minutes
add sliced sausage and saute until nicely browned on both sides
top with shredded cheese, turn off heat and cover for a couple minutes, until cheese is melted
The nutrition label on the sausage packet said one link had 1 gram carbohydrate. It also has 1 gram sugar. Others may be able to find sausage with zero grams of sugar. I found this dish to be very filling and I'm having it again tonight.
