large spoonful of ghee for cooking
1 corn tortilla (8g carbs)
2 cheddar cheese sticks (0 carbs)
2 tbsp. red enchilada sauce (2g carbs)
sprinkle of grated cheese
sprinkle of minced onion (I count 1g carbs for cheese & onion together, tho' they prob'ly aren't that much)
Recipe
Heat some ghee in a skillet & spread enchilada sauce in a plate.
With a spatula, place the tortilla in the hot ghee, turn it over gently, and then place it in the sauce on the plate.
Place both cheese sticks on the tortilla and roll it up around them.
Sprinkle grated cheese & onion over the enchilada & warm it in the microwave until cheese all melts. The cheese sticks won't melt & run out, but they'll get nice & soft.
When I make a whole pan of these, I use the conventional oven instead of the microwave. It makes a hearty snack or small meal which is fairly low-carb.
