Recipe Introduction
My husband says this is the best cornbread he has ever eaten. Of course, he loves anything that has orange in it. I have also lowered the sugar and added Splenda to make it more sugar-free.
List of Ingredients
- 1/2 cup olive oil
- 2 large eggs
- 1/4 cup sugar
- 1/4 cup Splenda
- 1/2 cup fresh orange juice
- 1 1/4 cups flour, spooned and leveled
- 1/2 cup cornmeal
- 2 teaspoons baking powder
- 1 teaspoon salt
- finely grated zest of 1 orange
Instructions
- Preheat oven to 375 degrees. Spray bottom of 8" round cake pan.
- In large bowl, whisk together oil, eggs, sugar, Splenda, and orange juice until smooth. Add rest of ingredients and whisk to combine.
- Pour batter into pan and bake for 25 minutes. Serves 8.
