Buttermilk Waffles
This recipe is from Martha Stewart Living. We serve it with slightly sweetened strawberries and whipped cream, which I think is heavenly.
List of Ingredients
- 2 cups flour
- 1/4 cup brown sugar
- 1 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 vanilla bean, split and scraped
- 3 eggs, separated, at room temperature
- 2 cups buttermilk
- 8 tablespoons butter, melted and at room temperature
Instructions
- Heat waffle iron. In large bowl, sift together flour, sugar, baking soda, baking powder, cinnamon and salt.
- In bowl, whisk together egg yolks, buttermilk, butter and vanilla bean scrapings. Pour into dry mixture; combine.
- In medium bowl, beat egg whites until stiff but not dry; fold whites into batter. Combine.
- Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid; bake 3-5 minutes, until no steam emerges from waffle iron. Keep warm in 200 degree oven.
