    Buttermilk Waffles

    This recipe is from Martha Stewart Living. We serve it with slightly sweetened strawberries and whipped cream, which I think is heavenly.


    List of Ingredients


    • 2 cups flour
    • 1/4 cup brown sugar
    • 1 teaspoon baking soda
    • 1 1/2 teaspoon baking powder
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1 vanilla bean, split and scraped
    • 3 eggs, separated, at room temperature
    • 2 cups buttermilk
    • 8 tablespoons butter, melted and at room temperature


    Instructions


    1. Heat waffle iron. In large bowl, sift together flour, sugar, baking soda, baking powder, cinnamon and salt.
    2. In bowl, whisk together egg yolks, buttermilk, butter and vanilla bean scrapings. Pour into dry mixture; combine.
    3. In medium bowl, beat egg whites until stiff but not dry; fold whites into batter. Combine.
    4. Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid; bake 3-5 minutes, until no steam emerges from waffle iron. Keep warm in 200 degree oven.
