Orange Pecan Cookies

- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 tablespoon orange zest
- 2 tablespoons fresh orange juice
- 1 large egg
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup finely chopped pecans
Instructions
- In a large bowl, beat butter and sugars at medium speed with an electric mixer until fluffy. Beat in orage zest and orange juice. Add egg, beating until combined.
- In a medium bowl, combine flour, baking soda, and salt. Gradually add to butter mixture, beating until combined. Beat in pecans. Divide dough in half. Shape each dough half into a 2-inch-wide log. Wrap each in parchmednt paper. Chill for at least 8 hours.
- Preheat oven to 350 degrees. Line baking sheets with parchment paper.
- Cut dough into 1/4-inch-thick slices. Place on prepared baking sheets. Bake for 10 to 15 minutes, or until edges are lightly browned. Let cool on pans for 2 minutes. Remove from pans, and cool completely on wire racks. Store in an airtight container for up to 1 week.
