Original Hot Brown

List of Ingredients
- 4 ounces butter (8 tbsp)
- 6 tablespoons flour
- 3-3 1/2 cups milk
- 6 tablespoons freshly grated Parmesan cheese
- 1 egg, beaten
- 1 ounce whipped cream, optional
- Salt & pepper to taste
- 8-12 slices toast, trimmed
- Slices of roasted turkey
- Extra grated Parmesan cheese
- 8-12 crisp-cooked bacon
Instructions
- Melt butter, and add enough flour to make a reasonably thick roux (enough to absorb all the butter). Add milk and Parmesan cheese. Add well-beaten egg to thicken the sauce, but do not allow it to boil. Remove from heat. Fold in whipped cream, if desired. Add salt and pepper to taste.
- For each Hot Brown, place 2 slices of toast in a metal or flame-proof dish. Cover toast with slices of roasted turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with extra Parmesan cheese. Place dish under broiler until sauce is speckled on top and bubbly. Remove from broiler; place 2 pieces bacon, crossed, on top and serve immediately.
- Yields 4-6 servings.
Final Comments
I used Texas toast. Didn't put the egg in it and put a tomato slice on the turkey before the sauce.
