    List of Ingredients


    • 4 ounces butter (8 tbsp)
    • 6 tablespoons flour
    • 3-3 1/2 cups milk
    • 6 tablespoons freshly grated Parmesan cheese
    • 1 egg, beaten
    • 1 ounce whipped cream, optional
    • Salt & pepper to taste
    • 8-12 slices toast, trimmed
    • Slices of roasted turkey
    • Extra grated Parmesan cheese
    • 8-12 crisp-cooked bacon


    Instructions


    1. Melt butter, and add enough flour to make a reasonably thick roux (enough to absorb all the butter). Add milk and Parmesan cheese. Add well-beaten egg to thicken the sauce, but do not allow it to boil. Remove from heat. Fold in whipped cream, if desired. Add salt and pepper to taste.
    2. For each Hot Brown, place 2 slices of toast in a metal or flame-proof dish. Cover toast with slices of roasted turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with extra Parmesan cheese. Place dish under broiler until sauce is speckled on top and bubbly. Remove from broiler; place 2 pieces bacon, crossed, on top and serve immediately.
    3. Yields 4-6 servings.


    Final Comments


    I used Texas toast. Didn't put the egg in it and put a tomato slice on the turkey before the sauce.
