1 1/2 pounds ground beef
2/3 cups soda crackers
1/3 cup onion, minced
1 extra large egg
1 1/2 tsp salt
1/4 tsp ginger, ground
1/4 cup milk
3 tbsp cornstarch
1/2 cup brown sugar, packed
1 can (13 1/2 oz) pineapple tidbits, reserve juice
1/3 cup apple cider vinegar
1 tbsp soy sauce
1/3 cup green pepper, chopped
1 beef bouillon cube
1 cup water
Recipe
Mix beef, cracker crumbs, onion, egg, salt, ginger and milk together.
Shape mixture by rounded tablespoonfuls into 1 inch balls.
In a large skillet, with a small amount of oil, brown the meatballs.
Remove the meatballs.
Keep warm and pour fat from skillet.
Mix cornstarch and sugar in the skillet you browned the meat balls in.
Stir in reserved pineapple juice, vinegar, soy sauce, bouillon and water until smooth.
Cook over medium heat, stirring constantly until mixture thickens and boils.
Boil and stir one minute.
Add meatballs, pineapple tidbits and green pepper.
Heat thoroughly.
Serve over rice or shell noodles.
