    Jordan Marsh Blueberry Muffins

    List of Ingredients




    1/2 c. (1 stick) butter or margarine
    1 1/4 c. granulated sugar
    2 eggs
    2 c all-purpose flour
    2 t. baking powder
    1/2 t. salt
    1/2 c. milk
    2 1/2 c. blueberries
    2 t. granulated sugar for tops

    Recipe



    Preheat oven to 375 degrees.

    Grease large muffin tins (be sure to grease top of pan also).

    Cream butter or margarine and 1 1/4 c. sugar until light. Add eggs, one at a time, beating well after each addition.

    Sift together the flour, baking powder and salt; add alternately with the milk to the creamed mixture. Do not overmix.

    Crush 1/2 c. blueberries with a fork. Mix into the batter by hand. Fold in the remaining blueberries. Fill prepared muffin cups with batter. Sprinkle with the sugar and bake for 30 minutes.
