For Cake:
1/2 cup unsalted butter
1-1/2 cups sugar
1 egg
2 cups sweetened or unsweetened applesauce
2-1/4 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon salt
2 teaspoons baking soda
1/2 cup pecan halves
1 apple, peeled, cored, and finely diced, plus 1 apple, thinly sliced
For Glaze:
1 cup apricot jam
1/4 cup honey
1 tablespoon water
Recipe
Preheat the oven to 350° F. Butter and flour an 9-inch springform pan.
TO MAKE THE CAKE: In a mixing bowl, cream the butter and gradually add the sugar. Beat until light and fluffy. Beat in the egg and blend in the applesauce. In another bowl, sift together the dry ingredients. Fold the mixture into the cake batter. Add the pecans and diced apple.
Pour the mixture into the prepared pan and arrange the apple slices decoratively on top. Bake for 1-1/4 hours, until the cake is springy to the touch and a toothpick inserted in the center comes out clean. Remove to a rack and allow to cool. Release the sides of the pan.
TO PREPARE THE GLAZE: In a small saucepan over low heat, combine the ingredients and stir until melted and smooth.
Brush the top of the cooled cake with the glaze.
