Margarita Cream Pie
A great summer pie!
List of Ingredients
Vanilla Crust:
1 1/2 cups vanilla wafer crumbs
1/3 cup butter
Lime Mousse Filling:
1/2 an envelope of unflavored gelatin
1/4 cup lime juice
1/8 cup water
1/2 teaspoon lime peel -- grated
4 drops green food coloring (optional)
4 ounces cream cheese
1/2 cup powdered sugar
1 cup whipping cream, whipped
Lemon Mousse Filling:
1/2 an envelope of unflavored gelatin, (remainder from the lime mousse)
1/4 cup lemon juice
1/8 cup water
1/2 teaspoon lemon peel -- grated
4 drops yellow food coloring (optional)
4 ounces cream cheese
1/2 cup powdered sugar
1 cup whipping cream, whipped
Whipped Topping:
1 cup whipping cream
2-3 TBS powdered sugar

Vanilla Crust:
Combine wafer crumbs and butter or margarine together. Press into 9 inch pie plate. Chill until set.
Lime Mousse Filling:
Combine gelatin, lime juice and water, Stir over medium heat until dissolved. Stir in peel and food coloring. Set aside. Combine cream cheese and sugar until smooth, add to gelatin mixture. Refrigerate 15 minutes until thick. Fold in whipped cream, spoon into bottom part of the pie crust spreading evenly. Refrigerate while making the lemon mousse.
Lemon Mousse Filling:
Combine gelatin, lemon juice and water, Stir over medium heat until dissolved. Stir in peel and food coloring. Set aside. Combine cream cheese and sugar until smooth, add to gelatin mixture. Refrigerate 15 minutes until thick. Fold in whipped cream, spoon on top of lime mousse spreading evenly, and top with sweetened whipped cream.
Whipped Topping:
Beat whipping cream at high speed in a bowl. When it starts to thicken, add the powdered sugar and continue to beat until stiff peaks form.
