    Bedford Hotel Maine Lobster Crab Cakes

    List of Ingredients




    1/2 lb Cooked Lobster Meat; (small dice)
    1/2 lb Cooked Crabmeat
    6 sl Diced White Bread; (no crust)
    2 ts Mayonnaise
    1 Egg
    1 tb Worcestershire Sauce
    1/2 tb Old Bay Seasoning
    1/2 tb Coleman's Dry Mustard
    1 tb Fresh Squeezed Lemon Juice
    1/8 ts Baking Powder
    1/2 tb Finely Chopped Parsley

    Recipe



    1. Add together and mix well: Egg, Old Bay Seasoning, Lemon Juice, Worcestershire Sauce, Mustard, Baking Powder and Parsley.

    2.Gently Fold in Bread, Lobster and Crabmeat.

    3.Form into (8) 3 oz. cakes and pan fry.

    To Pan Fry:
    Let your sauté pan get hot and then add enough olive oil to cover the bottom of the pan. Carefully place cakes into hot oil and brown on each side, being careful not to burn. 4.Once browned, finish them in a 350 degree oven for 3-5 minutes.

    Serves four - 2 cakes per serving.
