Pumpkin Roll

List of Ingredients
- Roll:
- 3 eggs
- 1 cup sugar
- 2/3 cup canned pumpkin
- 1-1/2 teaspoon limon juice
- 1/2 teaspoon vanilla
- 2/3 cup flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- Filling:
- 8 oz. cream cheese
- 5 tablespoons butter (room temp.)
- 1-1/3 cup powder sugar
- 1 cup chopped walnuts
Instructions
- Large bowl beat eggs at high speed for 15 minutes add sugar while beating. Combine pumpkin, limon juice & vanilla and add to mixture.
- Spread in greased & floured thin cookie sheet. Bake at 375 degree for 15 minutes. While warm turn out on a dish cloth and sprinkle with powder sugar. Roll up and let cool
- Mix cream cheese butter & powder sugar to smooth creamy texture. Unroll cake and spread with frosting on top. Keep some frosting on side.
- Re-roll cake then spread frosting on top and sprinkle with nuts.
