    Chicken Breast in Phyllo

    Recipe Introduction


    This recipe takes a little time to make, but it's worth it for a special occasion,especially for someone who likes their chicken on the spicy side.


    List of Ingredients


    • 1 cup mayonnaise
    • 1/2 cup chopped green onions(I used vidalia)
    • 4 oz. can of diced green chilies
    • 1 tsp. chili powder
    • 1/2 tsp. cayenne pepper
    • 2 cups shredded mixed colby and Monterey Jack cheese
    • 8 boneless,skinless chicken breasts
    • 16 sheets phyllo dough
    • 1 1/4 cup melted butter


    Instructions


    1. Combine first six ingredients(reserving 1/2 cup cheese.) to make a sauce. Place sheet of phyllo on waxed paper. Brush with melted butter.
    2. Spread about 1 1/2 T. of sauce on each side of chix breast.Place breast in corner of phyllo. Fold corner over breast,then fold sides over and roll breast up to form a package. Place in ungreased baking dish.
    3. Repeat with remaining breasts.
    4. Brush packages with remaining butter, and sprinkle with reserved cheese.
    5. Bake 375 for 30-40 minutes.


    Final Comments


    Serve with sour cream for garnish and rice on the side for a Mexican flavored meal.
