It wouldn't be Christmas without this treat!!
List of Ingredients
- 1 small potato, cooked until soft
- 1 tablespoon butter
- 1 lb. confectioner's sugar
- 1 teaspoon vanilla
- 1/3 cup peanut butter
Instructions
- Mash potato in a bowl and add butter and 1/3 of the sugar.
- Mix until smooth and keep adding sugar until all in.
- Add vanilla.
- If it's not stiff enough to roll, then add more sugar.
- Roll between 2 sheets of wax paper 1/8 in. thick.
- Spread with peanut butter.
- Roll up jelly-roll style and chill for 1 hour.
- Slice into ¼ in. slices.
- Let ripen for 1 day before eating.
