    It wouldn't be Christmas without this treat!!


    List of Ingredients


    • 1 small potato, cooked until soft
    • 1 tablespoon butter
    • 1 lb. confectioner's sugar
    • 1 teaspoon vanilla
    • 1/3 cup peanut butter


    Instructions


    1. Mash potato in a bowl and add butter and 1/3 of the sugar.
    2. Mix until smooth and keep adding sugar until all in.
    3. Add vanilla.
    4. If it's not stiff enough to roll, then add more sugar.
    5. Roll between 2 sheets of wax paper 1/8 in. thick.
    6. Spread with peanut butter.
    7. Roll up jelly-roll style and chill for 1 hour.
    8. Slice into ¼ in. slices.
    9. Let ripen for 1 day before eating.
