Recipe Introduction
This is a wonderful recipe. The chicken stays moist and tender and the smell as it's cooking is out of this world! It's a good one to cook on a weekend when you have time to cook!
List of Ingredients
- 3-4 lb. whole chicken
- 2 teaspoons salt
- 1 teaspoon paprika
- ¾ teaspoon pepper
- ½ teaspoon onion powder
- ½ teaspoon thyme
- ¼ teaspoon garlic powder
- 1 cup onion, chopped
Instructions
- Thoroughly rinse inside and out of chicken.
- Combine seasonings and rub on outside of chicken.
- Place chicken in a large resealable plastic bag, refrigerate overnight.
- Before roasting, stuff the cavity with chopped onion and roast, uncovered at 250° for 5 hours.
Final Comments
This will feed 4, so if you need more than that, cook 2 chickens. The cooking time is the same as for 1 chicken.
