    This is really good with meatloaf or steak! It disappears fast so I always make double for my family!


    List of Ingredients


    • 4 potatoes, thinly sliced
    • ¼ cup butter
    • 1 Tablespoon onion, minced
    • 1 teaspoon salt
    • ½ teaspoon dried thyme
    • 1/8 teaspoon pepper
    • 1 cup shredded cheddar cheese
    • 1 Tablespoon parsley, chopped


    Instructions


    1. Arrange potatoes in a greased 2-qt. baking pan; set aside.
    2. Melt butter in a saucepan over low heat; add onion, salt, thyme and pepper, stirring until onion is tender.
    3. Drizzle over potatoes; cover and bake at 425° for 45 minutes.
    4. Sprinkle with cheese and parsley; bake, uncovered for an additional 15 minutes.
    5. Serves 6
