Eggs with Corn Tortillas

List of Ingredients
- 8 eggs
- 4 corn tortillas
- 4 serrano chiles, diced small
- 1/2 cup red tomatoes, mashed
- 1/4 medium onion, mashed
- vegetable oil
Instructions
- Cut the tortillas in squares and fry in vegetable oil. Let stand on paper towels to drain.
- In a frying pan put 1 or 2 tablespoons of vegetable oil, when it is hot add the mashed onion.
- When the onion is transparent add the puree of red tomatoes and the diced chiles, let the sauce cook 10 to 15 minutes (add a little water if needed). Beat the eggs and add to the sauce, cook until eggs are set.
- Serve over tortilla squares with beans as a side dish.
Final Comments
Can be served as a breakfast meal without the beans.
