    Eggs with Corn Tortillas

    Serves 4


    List of Ingredients


    • 8 eggs
    • 4 corn tortillas
    • 4 serrano chiles, diced small
    • 1/2 cup red tomatoes, mashed
    • 1/4 medium onion, mashed
    • vegetable oil


    Instructions


    1. Cut the tortillas in squares and fry in vegetable oil. Let stand on paper towels to drain.
    2. In a frying pan put 1 or 2 tablespoons of vegetable oil, when it is hot add the mashed onion.
    3. When the onion is transparent add the puree of red tomatoes and the diced chiles, let the sauce cook 10 to 15 minutes (add a little water if needed). Beat the eggs and add to the sauce, cook until eggs are set.
    4. Serve over tortilla squares with beans as a side dish.


    Final Comments


    Can be served as a breakfast meal without the beans.
