Red Rice

Recipe Introduction
Serves 6
List of Ingredients
- 2 cups rice
- 4 cups boiling water
- 3/4 cup red tomato puree
- 1/2 cup carrots in little cubes
- 1/2 cup peas
- salt & pepper
- vegetable oil
Instructions
- Put the rice in hot water to wash it and let stand 2 to 3 hours. Then rinse with clear water and let dry, this can take another hour.
- Fry the rice in a large amount of vegetable oil, when the rice sounds like sand and looks hard remove from oil with slotted spoon, drain on paper towels.
- When drained add the red tomato puree and let stand to season 5 minutes, stir well, then add 4 cups of boiling water, salt and pepper and the vegetables, cover and let cook on lowest heat possible until all the water is evaporated, this can take 30 minutes or more.
- Serve with pork,beef or sausages.
Final Comments
Start this early as it is a long process, but well worth the effort.
